Time To Get Cookin!

Ok I guess I have procrastinated enough. Time to get to my list. First off I'd like to be a better cook (or at least learn how to make something besides mac and cheese). So I am going to learn five new recipes and add them to my box. I am leaving it up to you what those five are. Leave a comment with a recipe that is popular in your home and I will try them and choose the five favorites for our family.

Here are the requirements: 1-must be easy! (my cooking skills are to the extent of boiling water) 2- can't have onions, celary, mushrooms, tomatoes, squash, brocolli, dog, cat(just checkin;)), most fish, coconut, or peppers. Have I mentioned I am the pickiest eater on the planet? That explains the mac and cheese right?

So anyway, submit what you think would be a good addition to our collection of easy dinners and I will let you know what I choose. If I had any money, or anything cool, I would put a prize on the winning recipe, but the best I can do is offer service. Paul and I like to trade payments for service where we can. If you need any spring cleaning, yard work, babysitters, or anything at all let us know and we will oblige for your yummy dinner!:) So... LET'S GET COOKIN!!

  1. Chicken Alfrado

    2 chicken breasts
    1 stick butter
    1 cup heavy whipping cream
    1 cup fresh shredded parmesan cheese
    Cajan seasoning

    Cup chicken into bite size pieces, season with a little cajan seasoning, cook in medium skillet. Remove chicken. Same skillet don't clean add stick of butter melt add cup whipping cream and parmesan cheese, stir till cheese is melted and all looks creamy add cooked chicken back. Serve with about 3 to 4 cups cooked penne pasta. You can cook to pasta right or do you need explaining for that to. Ha Ha Just kidding. Hope you have fun and hope you like Alfrodo.

  2. Monterey Rice

    2 Cups Cooked Brown or White Rice
    3/4 Cup Monterey Cheese
    3/4 Cup Cheddar Cheese
    1 Cup Fat Free Sour Cream
    1 can diced green chilis

    Cover square pan with 1/2 the rice, then add in 1/2 the sour cream, 1/2 the cheese and 1/2 of the green chilis. Repeat, this time be sure to add the cheese last. Bake in the oven for 30-40 minutes at 350 degrees.

    You can also add black olives if you like. The best thing is it doesn't taste too bad without the green chiles... AND it's not THAT unhealthy for you. It's super easy too. I hope that wasn't too picky was it?

  3. Potato Bacon Chowder

    8 Strips of bacon
    1 Cup chopped onion (optional for you Kaylene)
    2-3 cups potatoes chopped
    1 cup water (from potatoes)
    1 can cream of chicken soup
    1 cup sour cream
    1 3/4 cup milk
    1 can corn
    salt and pepper to taste

    Saute bacon and onion, boil potatoes until tender drain (keep 1 cup of water from potatoes to add to soup) combine above ingredients. then add the water soup, sour cream and milk. Stir contantly until warm or warm in a crock pot for a few hours.

  4. Pancakes (homemade are the best. And we like breakfast for dinner)

    2 Cups buttermilk
    1 tsp each: salt, baking soda, baking powder
    2 Cups flour
    1/4 cup sugar

    Blend ingredients until smooth. Pour on greased griddle (I like to use bacon grease) in circles. Circle size depends on what you can flip. Cook 2-3 minutes on one side. Flip. Brown on the other side.

    Four fun variations:
    1. Add 3 well-mashed bananas, 1/4 cup chopped nuts.
    2. Add 1/2 cup pumpkin puree, 1 tsp cinnamon, 1/4 tsp each: ground cloves, ground dried ginger; and 1/4 cup chopped nuts
    3. Use whole wheat flour instead of all-purpose.
    4. Add 1 cup mashed potatoes. We like mashed potatoes from whole potatoes best.

  5. Italian Crockpot Chicken
    2 boneless skinless chicken breast
    1 packet dry italian dressing
    1/2 cup water
    combine these in crockpot cook on low 4 hrs or until done
    remove chicken and cut up
    leave water mix in crockpot and ...add
    1 package cream cheese
    1 can cream of chicken soup
    stir until creamy-may need to add milk to desired thickness
    add chicken back in and reheat
    serve over pasta, rice or mashed potatoes
